My love for nature has always been a driving force in my life. Using local, sustainable, and ethical ingredients is at the core of my culinary philosophy. By treating each ingredient with care and respect, I'm able to showcase their unique qualities and create visually stunning and delicious dishes that highlight the beauty and diversity of nature. Fermentation is an essential part of my cooking philosophy. I love the way that it can transform simple ingredients into complex, layered flavors that are truly one-of-a-kind. It also helps to preserve ingredients, allowing me to use them year-round and reducing food waste.

We believe that fermentation is not just a process, but a way of life. It allows us to explore and discover new flavors, techniques, and ingredients that help us to create products that are truly unique and differentiated from others in the market.
We draw inspiration from various cultures and apply time-honored fermentation techniques. All of our produce is locally sourced and organically grown by farmers we trust. We take our responsibility seriously and recycle all unsold products.
Currently, we work with our own fermented products, ranging from miso pastes and vinegars to garums, bottarga, lacto-fermented fruits and vegetables, and kombucha.
